Let’s get to the root of this…
Pumpkins, squash, and apples are typically the shining stars of fall produce. Some root veggies are sometimes overlooked, but these veggies are fall powerhouses!
Root veggies you might’ve seen at the market recently include potatoes, beets, radishes, turnips, carrots, and parsnips. Some root vegetables are perennials that are typically grown as annuals, but ask your farmer! Some vendors choose to let theirs grow back every year by only harvesting a select amount and letting some roots remain.
Growing underground, they absorb tons of nutrients from the soil, making them some of the heartiest + healthiest veggies you can buy at the market in the fall. If you see these veggies at the market with their greens still intact, snap those up! The green tops + sprouts of rutabagas, carrots, radishes, and other root veggies are loaded with vitamins and antioxidants.
As a general rule, keep root vegetables out of your fridge. Carrots do well in your crisper drawer, but they + other root vegetables can last for months if stored properly. Keep them in a mesh or wire container (they need ventilation!), ideally in a cool and dark spot.
Minnesota Grown ginger has been flying off vendors’ tables lately! Pick some up this weekend and enjoy one last cocktail outside in the early fall sun!
Fresh Ginger Moscow MulesIngredients:
MN Grown Fresh Ginger
2 oz vodka
1 oz simple syrup
2 oz club soda
Combine all ingredients in a cocktail shaker with ice and shake until outside of shaker is frosted. Strain into a glass filled with ice and enjoy!
