New Restaurant Still Set To Open Soon
Billy Tserenbat is a restaurateur with a big personality and optimistic outlook. So when restaurants were forced to shut down or limit their business to take-out—just as he was building a new restaurant in the North Loop—he didn’t get discouraged.
He made adjustments that will allow his new place, Billy Sushi, to handle more take-out food and drink with online ordering. It’s something he wouldn’t ordinarily have done at the outset since he says so many people visit a sushi bar for the experience of dining in and watching the chefs do their work.
He still plans to open on May 4th with tables in place if state guidelines allow indoor dining by then. His sushi bar at the kitchen will have 14 seats with a chef’s table at the end seating five more in a highly-visible spot.
Drinks will also be served in a separate bar area to the right of the entrance which can also be used for private events.
Billy Sushi will occupy the space that was formerly home to Sweet Chow, next to the new West Elm store on 1st Avenue and 2nd Street.
