Nothing Bundt Cakes Coming To North 2nd Street

A sweet little corner of the North Loop is about to get even sweeter this summer, with Nothing Bundt Cakes getting set to open its latest store at 316 North 2nd Street, right next door to Treats.

With flavors ranging from red velvet and white chocolate raspberry to s’mores and confetti, Nothing Bundt Cakes is the largest specialty cake company in the U.S. with more than 600 locations.

“We’re an affordable luxury,” said franchise owner Kim Cassens. “I just really like to celebrate all life occasions and this product allows us to do that.”

The cakes come in several sizes, from the traditional 8″ and 10″ sizes meant for a group, to smaller “Bundtlets” (about the size of a softball) and bite-sized “Bundtinis” which can be purchased by the dozen.

While the actual baking of the cakes takes place in a central bakery in Plymouth, workers at the new North Loop store will be personally adding the layers of cream cheese frosting, which for some customers is the biggest attraction.

“If you ask my grandkids, it’s definitely the frosting,” Cassens said with a laugh, “but it’s the cakes. The cakes are just so good.”

This will be her sixth store in the Twin Cities, joining the locations in Minnetonka, Eden Prairie, Eagan, Savage and Mall of America.

Why North Loop? “Because we love North Loop,” she said.  “My husband works downtown, so just knowing the area and being part of that community is really exciting for us.”

Bundt-style cakes have European origins but it was a Minnesotan, H. David Dalquist, who invented the Bundt cake pan in 1950, which made his company, Nordic Ware, such a success.

Nothing Bundt Cakes did not get its start in Minnesota–it was founded by two women in Nevada–but it’s proven to be a very popular franchise here.

“It’s just unique in the fact that we only make Bundt cakes in four different sizes and don’t deviate from that,” Cassens said. “We’re staying in our lane, I guess.”

With help from her son, Joe, who’s the VP of Operations, she hopes to have the North Loop location open in August.
