Luke Shimp knocked it out of the park with his Red Cow burger concept, so he’s sticking with the lucky color for his newest restaurant.
Shimp’s forthcoming North Loop restaurant will be called Red Rabbit and serve pizzas, pastas, oysters and salads. He’s partnering with former Parella Chef Todd McDonald on the project at 201 Washington Ave. N., a former auto shop.
A three-season garden patio called The Greenhouse behind the building will serve cocktails by bar man Ian Lowther, according to a news release.
Red Cow also has two stands at Target Field and recently won the Twin Cities Burger Battle.
