Travail’s Makeover Of Graze Food Hall Nearly Complete

Since Travail took over Graze Food Hall last fall, the new owners have taken swift action to class up the joint.

I mean, how many James Beard-nominated chefs can you fit under one roof? The answer would be five in the case of Graze, which now has all its new kitchens up and running.

Director of Operations Molly Herrmann says visitors “should expect an elevated level of food. We are going to be changing the cocktail and wine programs too so they can expect some elevated offerings at the bar. But really, we’re still at heart a neighborhood diner and bar that you can come and hang out in. You just have a lot more options.”

While some familiar faces remain: The Fabled Rooster, Wrap/Wrad and Two Mixed Up, here are the new offerings, as described by Travail:

Caja Fried Chicken from chef Alex Roberts of Alma and Brasa: Inspired by New Orleans Creole and Southern comfort food traditions, highlighting responsibly sourced chicken fried in beef tallow, a technique embraced by earlier generations that yields a unique and exceptionally delicious product.

Graze On The Green features chef-inspired grain bowls and fresh salads. Our menu features bowls with seasonal ingredients full of flavor to keep you balanced. We also offer a spritz bar featuring floral, bitter and tropical beverages (coming soon).

Tixtli By Nixta – Tacos + Heirloom Corn: Kate and Gustavo Romero are the nixtamal power couple of the Twin Cities. They currently run the James Beard nominated Oro by Nixta, where corn is king on the menu. Tixtli by Nixta is their throwback to the early days of their operation.

Umami by Travail – Asian Street Food: Celebrated as one of Travail’s most beloved chef pop-up concepts since 2013. The menu is all about enjoying foods that are full of Umami flavor, like dumplings, kimchi, fermented cabbage, pickles, and rich miso dishes. The menu features dumplings from Saturday Dumpling Co.

Graze Food Hall, at 520 North First Street, is open Monday-Thursday 11a-8p, Friday & Saturday 11a-9p, and Sunday 11a-7p.
